1 cup bread cut in 1/3 inch cubes
Butter

Instructions
Fry cubes of bread in butter until well browned and crisp.
Beat eggs slightly. Add cream, salt, pepper, and croutons.
Put two tablespoons butter in hot omelet pan. As soon as it's melted and slightly browned, turn in mixture; as it cooks, prick and pick up with a fork until the whole is of creamy consistency.
Place on hotter part of range that it may brown quickly underneath.
Fold, and turn on hot platter.

Mancanegara: Omelet sudah dikenal di Prancis sejak pertengahan abad 16. Omelet yang berarti ‘piring tipis kecil’ ini juga disebut ‘pancake telur’. Dalam perkembangannya di berbagai negara di belahan bumi juga mengenal bentuk telur dadar ini. Seperti di Persia dikenal ‘kookoo’ yaitu omelet dengan tambahan aneka rempah. Di Timur tenah dikenal ‘eggah’, omelet yang agak tebal dengan isi aneka sayuran, daging sapi, daging ayam, mi, dll. Di Italia dikenal frittata, dan di Jepang dikenal ‘okonomiyaki’. Adapatasi tiap negera memberi berbagai alternatif tampilan omelet sehingga tidak membosankan. Cita rasa omelet juga tidak hanya gurih tetapi juga ada yang manis. Memakai gula pasir, cokelat dan buah-buahan kering dan segar.

Telur Segar: Bahan utam omelet adalah telur ayam segar. Karena itu pilih telur ayam yang benar-benar segar, tidak lebih dari seminggu umurnya agar aroma dan tekstur omelet lebih bagus. Jika ingin tekstur yang lebih ringan kuning telur dan putih telur bisa dipisahkan dan setelah dikocok hingga mengembang, putih telur ditambahkan terakhir.

Variasi Isi: Untuk isi omelet bisa dipakai aneka bahan mulai dari sayuran segar, kacang-kacangan, daging sapi, daging ayam, seafood, keju dan aneka daging olahan. Bahan-bahan bisa dipilih sesuai dengan selera. Demikian juga tambahan rempah segar atau kering sebagai bumbunya.

Penyajian: Omelet manis atau gurih harus disajikan selagi hangat. Karena memakai bahan utama telur ayam maka omelet akan mudah berbau anyir jika sudah dingin dan rasanya menjadi kurang gurih. Untuk menghangatkan kembali bisa dipanggang sebentar dalam toaster atau oven panas.
